This beautiful, tactile mould, made from warm beechwood is a joy to use when making fresh pasta. The mould makes eight ravioli at a time. This mould comes with a small tamper, shaped to fit the mould perfectly, to push the pasta into the contours of the mould. This speeds up pasta making when you want to make a large b.

This mould comes with a small tamper, shaped to fit the mould perfectly, to push the pasta into the contours of the mould. This speeds up pasta making when you want to make a large batch. 

To use:

  • Flour the surface of the mould to stop pasta dough sticking.
  • Place sheet of pasta onto the mould.
  • Using the tamper, push the pasta into the contours and remove.
  • Fill the indented pasta sheet with the filling of your choice.
  • Place second sheet of pasta on top.
  • Using a rolling pin, gently roll over both sheets to stick the pasta layers together.
  • Flip your ravioli out by turning the mould over.
  • Cut out the ravioli with a pasta cutting wheel or cookie cutter.

These wooden moulds are an excellent example of Italian artisanal craftsmanship. The charming patterns and designs have been conceived and produced in Sardinia, where each mould is painstakingly hand finished to ensure crisp outlines for the perfect imprint on your pasta. Each mould is treated with a food grade oil to ensure durability and to bring out the brilliance of the wood.

Dating back to medieval times, 'Sartiglia' is a race, on horseback, performed during the carnival in Oristano, Sardinia. One of the many traditions performed during the day is when the 'knights' have to lance with their sword, a metal star that hangs from a line, whilst riding a horse at full gallop. Inspired by 'Sartiglia', the wooden mould features stars and patterns that echo the rosettes and decorations of the day.

Material and Care

Beechwood.

Not dishwasher safe. After use, wash with lukewarm water and possibly a soft toothbrush. Leave to dry completely before storing.
