The Jende black ceramic sharpening steel is Mohs 8, which leaves a more refined finished edge that is about 1,500 grit. Ceramic steels allow your knives to keep their edge integrity longer, therefore extending the time needed between full on sharpening sessions to reset the angles. See also our White Sharpening Steel which is Mohs 9, and about 1,200 grit.    The Jende Black Ceramic Sharpening Steels have break resistant technology in the tips and handles that make these sharpening steels actually usable in an active kitchen setting, minimizing the worry of breaking from the slightest breeze or hard stare.
